Streusel Cinnamon Coffee Cake

Perfect for an afternoon break, but look at the ingredients… milk, egg, Bisquick – sounds like a breakfast to me.  This is so easy to put together that you can’t have any excuse for not trying this.  Although it’s got Bisquick, it’s not at all heavy but very light & well… crummy.

Streusel Mixture:
1/2    Cup light brown sugar, firmly packed
2       Teaspoons cinnamon
1       Teaspoon nutmeg
1/3    Cup finely chopped pecans
3       Tablespoons melted butter

Coffeecake:
1        Egg
1/4     Cup granulated sugar
1        Cup milk
2-1/2  Cups Bisquick mix
2        Tablespoons melted butter

*  Preheat oven to 375°. Grease 9×9″ pan or Corningware dish
*  Combine Streusel using all ingredients & mix with fork
*  For Coffeecake mixture:
In mixing bowl, beat egg, sugar, and milk.  Add Bisquick mix and
and butter until well combined (do not over beat).
*  Stir in 1/2 Streusel mixture
*  Spread batter into prepared pan, then sprinkle remainder of
Struesel mixture over the top.
*  Bake for about 25 minutes until top is golden. Test center
with toothpick. Cool for about 15 minutes, cut while warm.

    • See, timing is everything. Now you’re the 2nd person to mention heart healthy Bisquick so I had to check my box. Nope, nothing says heart healthy but I’ll go with that just because it sounds like the right thing to do.

      • Scott made me buy the box (it’s white, I think — with green lettering) when he was on his diet. I’ve made a few rounds of pancakes with it since, but that’s about it.

      • Ah, see they must still sell the original one. John does the groceries for me so there’s no way he’d grab anything that says “healthy” on it. Of course he may be re-thinking all that now since I had to drive him to the ER Sat. morning w/chest pains! Cripes, why do guys have to stand there arguing about these things? Chest pains – that’s an ambulance John, if not then get in my car but you are not driving yourself ferchristsakesyouidiot! Turns out it was some sort of inflammation around his heart from a flu bug we’d been tossing back & forth here. But very scary morning.

      • Gosh. That IS scary. Scott has actually been through something similar, a couple of years ago. He was commuting a total of 3 hours daily (and not on public trans — he was driving) and developed an inflammation in the surrounding tissue and ribs, from stress — costochondritis, I think they called it. Another friend of ours, in his 30s, had a virus, like John.

      • Sounds like what John was doing w/the 3 hr. commute until he finally took the company relocation package & we moved here. One year later the company closed & he started working for a company that was about 15 minutes from our old house. Oh well, we love where we are & it’s close to all the major highways so we can get anywhere easily.
        At first the doctor wasn’t sure about what had caused the chest pain until I reminded him about the bug he’d had. You usually think of these things happening to other people.
