Explosive Coconut Chicken

I finally got around to trying a Coconut Chicken recipe from Frugal Foods from Justa’s Kitchen (I haven’t seen her here for ages but still go back to her blog for some great recipes).

First, it was delicious but there’s a couple of things you need to be aware of before cooking this up. (Please read my final tip on re-heating leftovers) Frying coconut encrusted chicken in oil creates a lot of smoke if the temp is too high!  If you are still dipping and coating chicken breasts while the first batch is frying up, and not paying attention, you will set off the smoke alarms.  This slows things down considerably while you open windows, grab towels to blow the smoke away to clear the alarms and let the dog out because she’s howling at the piercing, screaming alarms.  With that in mind, this can be a quick and easy dinner ready for the table in half an hour.

COCONUT CHICKEN BREASTS

  • 1-2 pounds boneless, skinless chicken breast
  • 2 large eggs
  • 1/4 cup coconut milk
  • 1/2 cup all purpose flour
  • 1 cup Panko bread crumbs
  • 1 cup shredded coconut
  • 1/2 teaspoon salt
  • 1/2 cup vegetable or olive oil
  • 1 cup sweet chili sauce

1.  Pound chicken breasts to about 1/4″ thickness.  Whisk eggs and    coconut milk together, then soak chicken in mixture (this could be done overnight).
2.  Set up a couple plates dredging & dipping:
* Mix flour and salt on 1 plate
* Mix bread crumbs and coconut on 2nd plate
3. Take chicken that’s been soaking in egg/coconut milk and dredge in flour mixture, then into the bread crumb/coconut mix.  Have some extra coconut to smoosh into the chicken breasts if it doesn’t completely stick or coat the chicken breast.
4. Heat 1/2 the oil in pan at not quite medium-high. Once it’s hot, begin frying chicken.  If you can fit all the chicken into 1 frying then you should be all set & ready to eat in minutes.  If you need to fry a 2nd batch, clear the pan of any browned coconut bits, add remaining oil &  finish.  Can be served with sweet chili sauce for dipping or a sweet and sour sauce would also be good.

I’m sure you’ve all received dire email warnings from your mother or friends about microwaving coffee (if not, no more than 2 minutes or it’ll explode when you take it out…most likely melting your face).  So you have to be careful when microwaving certain things.  Take this true case for instance…

I have a golfing friend.  In New England it can get chilly golfing in the fall as you know from my prior post.  There are some golfing ranges around here that advertise that they have heated tees, the reasoning being that warm balls travel further.

Since he was playing 9 holes and not just smacking balls at a range, he decided to warm up his balls before heading out.  So… he microwaved them.  When the first ball exploded the microwave door open and his wife screamed “what the hell was that?”, not wanting to appear silly, he grabbed the rest of the balls and shoved them in his pocket.  His front pants pocket to be exact.

Unfortunately, the balls were continuing to heat & expand causing his balls to explode.  At which point he remembered what he learned in elementary school about catching on fire, figured it was close enough and did the stop, drop …as his wife walked into the kitchen to see him with his exploding pants around his ankles while grabbing his other balls.  So now you can pass the word to your golfing friends – do not heat your balls in the microwave!  And this tip from me – do not heat leftover Coconut Chicken in the microwave unless you cover it with Saran Wrap and re-heat for no longer than 1 minute.  Or you will get this:

  1. God the disasters I’ve had with microwaves – especially porridge – that goes from cold to nuclear in the blink of an eye! And griddling steak gets the fire fire brigade round in no time!

    • That’s a good one to remember – the porridge. You get all those little bubbles in there just waiting to blow up in your face. Lucky for my dog’s ears, I do steaks outside on the grill, otherwise I’m sure I’d be waving towels for that too. When you think about it, we’re basically armed with small, personal nuclear devices. Some are responsible with them, and then you and I should probably have supervision.

      I wouldn’t want Lola do a “tell all” about life in this house, that’s for sure. I’m so glad she can’t talk & now that Niki the fink has her own apartment I can get away with a lot more – especially now that the Niki’s Newsletter is defunct.

    • Wouldn’t it be a riot to get a new microwave & see that in the instructions? “DO NOT HEAT GOLFBALLS IN OVEN”. Every time I get some new gizmo or appliance & read all the warnings I just shake my head & think “now who doesn’t know that?” Like do not dry hair while sitting in a tub of water.

    Some days we just don’t have the best of luck in the kitchen. I’m still not ready to get back into mine after all the rain damage!

    • I was in tears hearing about the golf ball story & I can tell you that after the first explosion of my chicken, I did the wrong thing & opened the door right away… the chicken was not done flying at that point so a piece shot over my shoulder, to be found by my dog later.
      Are things looking better there? Mother Nature is about to pull a dirty trick on us, probably by Monday & lasting for 3 days. No idea what we’re going to end up with although definitely winds at 50-70 mph. I keep hearing some areas, probably west of us may be getting a couple feet of snow. Expecting to lose power here & it’s just a matter of when & for how long. It’s almost okay unless it gets freezing cold…then it’s miserable.

      • I must admit to being a wee bit nervous plugging the microwave in after the rain – it got drenched to say the least. After holding me breath, squeezing my eyes shut and getting ready to run like hell, it worked perfectly! YAY. We have made a really good start to the roof repairs and we are hoping to have them finished today so that we can start with the interior repairs which our handyman will do for us on Mondays and Fridays, so the end result may take a little longer to see but no matter. Oh dear Diane, I am sorry to hear that you have such shocking weather on it’s way to you, I do hope you don’t lose your power, that would be horrible! Stay warm. 🙂 x0

      • Wow, you really got wet huh? Did it take your roof right off? Did you have to move our of your house? I’m not sure if I would be brave enough to touch an appliance that had taken a bath.
        We do get some weird weather here & right now we’re just on the fringe of the storm – later today is when the winds are supposed to really hit & coastal areas will definitely be flooded.
        Last year we had a basic thunder & lightening storm but my neighbor across the street took a direct lightening hit via copper trim on her roof. It traveled along metal inside her house – you know how they put the metal edging at the corners of walls under the plaster? Just as she & her daughter walked in, an entire wall exploded out at them, plus everything electrical just blew up – garage door openers even blew off the mounts. Although we didn’t take a direct hit over here, my microwave blew out & the underground dog fence blew up. Strange how electricity travels.
        I guess we’re as ready as we can be for “Sandy” today but they do say if we lose power, it’s going to be for a very long time because of the numbers they expect to get knocked out.

      And yes, the pieces of chicken that I picked up were still pretty good. The dog enjoyed the pieces that came flying out over my shoulder – another recommendation: when you have explosions going on inside the microwave, DO NOT open the door until everything has settled down.

  6. Now I want to caution you about telling other guys who golf about this idea. If they start to ask questions like…”well how long did he set it for” or “what temperature did he use?”, that’s an indication that the person thinks this is basically a good concept that just needs tweaking. DO NOT encourage this. Socks – I recommend 2 minutes for anything with yarn or fabric.
    I was going to email Justa too & I’m sorry to hear that she didn’t answer. I surely hope everything’s all right & miss her blogs & humor.

    • It’s always best to let others have the disasters. Yet I’m wondering if there are still people out there who hear about warming up golf balls & are thinking…okay no microwave but… well, maybe if I put them in the oven at 350 for say about a half hour.

  8. Everything about this post sounds like something that would TOTALLY happen to me, with the possible exception of the whole golf ball scenario, of course. I find golf to be a complete yawn, but will be sure to warn any of my friends who may be heading out to the links this winter!

    • Well the Coconut Chicken was great the first time around in the oven – it was the re-run when things went bad. I agree with you completely about golf. I mean all you do is hit a ball, go find a ball, hit a ball, go find a ball. Now be very careful w/who you warn about this. As I mentioned above, if they show too much interest in the setting or how long my friend put his balls in the oven, then you’re dealing with someone who thinks the basic concept is good & will likely blow his balls up experimenting.

    • We love coconut on pretty much everything & love the coconut shrimp. It works just as well with the chicken & I’m probably going to experiment with a white fish too. And please be careful w/the microwave – there’s no comfortable way to clean off the top of the oven w/o throwing your back out.

    You are a true gem! I LOVE your stories and can’t believe I stayed away so long but I haven’t spent much time on the computer in the past few months. Mr. Foodie has been in and out of town all year and I’ve been dealing with a health issue so I pretty much stopped cooking anything blog worthy and now we are getting ready to move across country!! I am in overdrive trying to use up what’s in the freezers (remember when you teased me about our little deep freeze and Hunger Games?…you have NO idea! We bought a LARGER deep freeze a few months ago and filled it to the gills!!! We are scarfing down meat like there’s no tomorrow and still won’t make a dent in what we have set back.) All that said, I was thinking about you recently. My Uncle Jawww-Geee (that’s Georgie in Massachusetts-Speak in case you couldn’t tell. 🙂 )and his wife have been in town for a month, staying with my parents and visiting other family in the area. Their visit brought you to the forefront of my mind and I’ve been wondering how you’ve been. I’m strangely comforted to see that things are still normal for you. Smoke Detectors are still going off, Lola is grabbing exploding chicken off the floor and you are still preaching safety. When you have hot, expanding balls in your pants, STOP, DROP and ROLL!! LOLOL!! BTW, I got Susan’s email…I’ve just been so preoccupied and now time has flown by! I’ll respond to her email tomorrow. Thanks for yet another belly-laugh. You’re the best!! 🙂

    • You’re BACK!!! I’ve been thinking about you & you were on my mind just last night, then BAM! here you are…kind of eerie no? I’m so sorry to hear about health issues yet do know how that has to take priority and I really, really hope things are better for you now.
      But you’re moving across the country? How will you ever live so far away from the ocean? (Seriously I worked w/a woman who’d been offered a transfer to our Calif. office & didn’t want it because she said she could never live so far away from the ocean ;)) ???
      Of course I remember my jaw dropping at what you had in your freezer so I’m now trying to picture a bigger one. And no I haven’t gotten any better w/stocking mine although w/the heat we had this summer I did stuff it with food destined for the dump so as not to draw maggots. Can you imagine my husband asked me why I was putting garbage in the freezer? Hey, you just ate that garbage last week – you calling my meals garbage now?
      Seriously, I am so happy to have you back & will always be thankful for your support & encouragement when I started this blog. I can’t wait to get more inspiration from you & yes, I will continue with public service announcements to hopefully prevent guys from blowing their balls off, although I’m sure Emergency Rooms everywhere appreciate a good laugh.
