Rosemary Braised Short Ribs and Retirement

It seems like a very long time ago I mentioned that I’d be posting my version of braised short ribs based on a meal my daughter and I had in New York City.  I’ve been tweaking the recipe a few times to get it pretty close to that great meal but we’ve had a few things going on here that just keep getting in the way of actually writing a post.

You might recall that my husband retired.  If you ask him how retirement’s going, he’s likely to say “great, getting used to it, but it’s great”.  Out of his hearing though, my friends ask me “So, how is it having John home all the time now?”.  My response is usually something like… “Well we haven’t killed each other yet although he almost got smacked upside the head with the cast iron skillet when he thought it was a good idea to rearrange the kitchen”.  Don’t get me wrong – retirement’s great…I’ve loved every minute of MY retirement and after 36 years of marriage we still love each other and it’s nice to finally be able to just go and do whatever we want, when we want to do it.  But, it’s an adjustment and just like recipes, you need to tweak things a little until you get them just right.

It’s not that we don’t have plenty of room in the house.  We’ve got more than enough room for just two people but the problem seems to be that even with all that room, we both end up being in exactly the same place at the same time – namely in front of the ONE computer.  Which is why I’ve had a hard time getting a blog posted since I write in spurts.  I’ll do a paragraph, get up to maybe get a load of laundry going, grab a cup of coffee, and sit back down at the computer – except there’s now someone else’s butt in the chair.  I may have posted a while ago what I think of the new Windows (##@#!!!##).  One of the  ‘features’ is that if someone else logs on, you have to go back through your logon security screen to get to where you were.  You might not think it’s that big a deal but if you end up doing that every 20 minutes or so, it does get annoying.  That problem should be resolved soon since I just bought a new Mac laptop.  Just hang in there though while I go through my learning curve of switching from a desktop to a laptop and Windows to Apple (I’m signed up for one of their classes November 10th).

Another interesting thing with having a retired husband home is that he suddenly realizes all of the things that need to be fixed or updated around the house.  You know, the things I’ve been staring at and ‘mentioning’ for 10 years.  My thinking is, that it’s perfect to have someone to help me repaint all of the rooms in the house.  What’s not going so well is color selection. As a result, I think I have the little paint cards for every Sherwin Williams, Benjamin Moore, Glidden, and Valspar color ever created.  Every day I drive over to Lowe’s, Home Depot, or Ace Hardware to pick up some more color cards.  I think if I just tape all of the cards on the walls, I’ll have at least one room completely repainted.   Let’s just say that our tastes are so different that we’ll be lucky to get a color selected by next spring – but you can be sure that one of the guest bedrooms will NOT be electric mint green.

Since my husband has seen the error of his ways in rearranging the kitchen and he’s decided that I’ll still be head chef around here, this is my final version of the braised short rib recipe – although please feel free to play with the ingredients, especially the ketchup and mustard, depending on how sweet or tart you like things.

Rosemary Braised Short Ribs

Prep Beef short ribs:
Sprinkle 4-6 beef short ribs with salt, pepper, and rosemary.  Slow cook seasoned ribs in a crock pot with about 1 cup of red wine  for an afternoon until meat falls off the bone and can be shredded with a fork.  Save liquid from pot for meat sauce.

For the meat sauce:

– Dice 1 medium onion and 3 large cloves of garlic.  Sauté onion in olive oil in large, heavy skillet until  translucent then add minced garlic.
– Stir in about 4 tablespoons of ketchup and 2 tablespoons of mustard of your choice.  I love using the using the Maille brand Old Style whole grain Dijon mustard.
– Skim off the fat from the liquid in the crock pot and add beef/wine liquid to skillet with shredded rib meat.  Stir it all together and let it simmer to the consistency of a pasta sauce.
– Serve on top of your favorite pasta with a nice topping of fresh grated parmesan cheese.

  1. You’ll learn that, with a Mac, it takes 1-2 clicks to do what (it took) 3-5 clicks to do with a Windows machine. Also, continue to use a MS mouse (two buttons) and you’ll not likely miss a beat. I was a PC guy for more than 20 years (yes) when I realized that I’d been working on the same Mac at work for 3 years with no slow-down and nary a virus. I replaced every computer in our home with the more expensive — and much longer lasting — Mac.

    Now.. Those braised ribs look divine! I want those! Now! The only problem: It’s 7:30 on a Friday night. Tomorrow. Or Sunday maybe. Wow! Can’t wait!

    • You’ve given me hope on figuring out the laptop and that’s a good tip about trying the mouse since this little pad seems awkward to me. I’ve got so much stuff, like my photos to bring over but I think it’s time to organize those files anyway. One thing that i’ve been really impressed with is the help you get at the Apple store. What I found very interesting was that Microsoft opened a store 2 doors down from Apple and the Apple store was buzzing with customers and sales help. Microsoft on the other hand had about 4 sales people standing around keeping each other company and not a customer in sight.
      I’m sorry I posted so late yesterday. Not a chance of braising those ribs tonight but I hope you enjoy them. I’d bring some over if you weren’t so far away.

  2. You’re lucky Lola doesn’t have a blog or there’d be three of you trying to use the computer. But while the two of you are deciding who gets to use the computer, I think Lola and I will get some of those short ribs off the counter. Yum!

    • Lola might not be able to handle the computer since all of the little noises it makes scare her right out of the house. The one who needs his own computer is Moe! If that cat isn’t parked on the keyboard, he’s strutting back & forth in front of the screen.
      I have a feeling if you were at our house Bongo, that you and Lola would have had quite the feast. I just barely saved the ribs when I left them on the counter…tucked way back in the corner mind you.

  3. What a heavenly meal Diane.
    Adjusting to having hubby home is something I do every couple of weeks when Pete is home in between trips. When he is home, he is home – he doesn’t go to the office (well that would be difficult seeing as his office is a 10 hour drive away) so I completely appreciate what you are saying.

    • It’s funny how we like our routines isn’t is? I always had my morning routine of a cup of coffee, check my email & read up on the news every morning. My husband likes the same routine. It’s nice having him around, but I have been encouraging him to get out and stay in touch with his friends. Matter of fact I finally got that post out last night by pushing him out to see a hockey game with a friend of his from work.
      So are things better in your area? Did they catch who was responsible or did the neighborhood watches just encourage them to move on? That must have been very scary for you being home alone so much. It’s wonderful when neighbors look out for each other, even if it’s not during a crime wave – just having people around who keep an eye on you can be very comforting.

      • Sadly nobody has been apprehended yet Diane. It seems to be a syndicate moving from town to town in our surrounding areas. Hopefully our continued patrolling will keep them out of our little village. 🙂 xo

    • We never used to have much of a problem with the computer until John retired since of course I had it all day and when he got home, he had his company laptop. We both have iPads too but they do have their limitations. I love mine for quick checks of email & for when I want to just zone out and play a card game but it just can’t handle doing the blog or the number of photos I take.
      I just bought a new version of Adobe Photoshop which I’m also having to figure out (been slow going on that) and I want to see if I can use the same license to put it on my laptop. Plus of course moving all of my photos over will be an interesting exercise.

  4. Oh brother.My husband retired 3 years ago, and it’s not that we don’t get along. It’s just that he still does nothing, like he did when he worked. Not a light bulb, air filter, nothing. So we had a come to Jesus week about a year ago when I told him I felt like I ran a boarding house for one. And when do I get to retire? I’m still not sure he gets it, but he’s been doing a little more. Maybe there’s hope. Good luck with your husband. I guess I should be happy that mine doesn’t do anything in the kitchen.     • Well I guess it’s a matter of the things husbands decide to do. Rearranging the kitchen = NO (unless you’re going to do the cooking). Helping with maintain the house = YES.
      You might appreciate what happened when my husband, during his first week of retirement ‘showed me ‘ some grease stains that had dribbled down the cabinets…I just looked from the spots to him, back & forth, then went into full blown drama queen mode “OMG!!!! What should we do? Look at those spots – should we CALL someone?”. Then I showed him where we keep this nice handy little basket of rags for whoever sees spills or stains.

    • So far I like the Mac but since the only Apple product I’ve used is my IPad, I keep trying to swipe the screen with my finger – of course it doesn’t have a touch screen but that doesn’t stop me from trying. It’s funny isn’t it – no matter how big our houses may be, we probably only use a small fraction of the space & there are just a few places people gravitate to.

    • I can remember when we bought our first home computer – yes just one big old clunker that took up half the desk. Everybody thought that was just so cool but no one even though of having one for themselves. Then the cell phones came along – you probably don’t remember the big ones with the antenna that you pulled up but we had one of those. Again, no one thought of more than one for the family because of course that one phone was ‘just in case of emergency’ on the roads or wherever. Now, I can’t even imagine having to share electronics because they’ve become such an extension of ourselves.

I keep working part-time so Louie will have a longer life expectancy now that he knows everything about … everything around the house. I know I’ve seen a craft made with paint chips, so you can them all up, but I can’t remember what it is. The ribs sound delicious!

    • Oh Kathy, I’m so glad you’re reading (I do better keeping up with things on the blog than on FB). John’s still adjusting to the retirement routine but he sure does seem a lot more relaxed than before and it’s great being able to eat dinner earlier. It’s funny though because I notice he keeps thinking that he has to wait until the weekend to get things done. The dump is only open Wednesday, Friday & Saturday. Of course that was the big Saturday morning event for John and Lola. Now, I know we’re not generating any more trash but he’s been going to the dump 3 times a week! At least Lola’s loving that since she gets 2 dog cookies there.

    Love how rosemary goes so well with beef and I bet your short ribs are fantastic, Diane. This is the time of year when I normally prepare a short rib dinner — with sandwiches the next day. Cannot beat it!
    I was a programmer for much of my life, working on the mainframe. I converted to Apple about 7 years ago and have not looked back. I think you’ll find it more of an adjustment using a laptop – things like the scroll pad – than it will be “going Apple.” I hope you purchased Apple Cares for your laptop. Those customer care reps will spend as much time as you need to handle your concerns. You’ll be amazed.

    • I think the leftovers of the short ribs is great the next day – something about how the flavors just keep on ‘flavoring’.
      You were a programmer? I was in software on the applications side and then managed a product group so I became very familiar with the little differences between “features” and “options”. We used to say options were things you could do something about but features…well, ya just gotta live with ’em.
      I’m signed up for the first available group class in November and then I do plan to buy the One on One plan. My husband bought that for me when he got me the IPad but the store was too far away to make much use of it. Now, they’ve just opened an Apple store exactly 8 minutes from my house so it does make sense. I might just move in there & I’m sure they’ll all get to know me very well.
      I was thinking about why I should be worried about going to Apple from Windows and came to the conclusion that it wasn’t anything to worry about because ever since they came out with Windows 8, it’s been like computers 101 all over again.

  8. So many thoughts…first, you are going to love your Mac laptop. I’ve got a MacBook Pro and absolutely have had no problems using it. Plus it is nice to be able to take it with you…mine has been to Europe and back several times. Your short ribs sound terrific…do you use bone in or boneless ribs? I think electric mint green might be a little shocking…especially when applied to four walls. My husband has retired three times…he missed the challenge of a job and now hangs out at a friends business giving them advise. 😀

    • The MacBook Pro is the one I got too! So far I’m finding that its easy to do the basics and most things that I’ve done with Windows. I actually think the biggest adjustment has been going to a laptop from the desktop which had a nice ergonomic keyboard, but I’m determined to give the little pad a fair trial.
      I used the bone in for the ribs. Had the butcher find me some really nice ones. After the crock pot, the meat just fell of the bones with a fork.
      Mint green Karen? No, no…that was John’s choice but alas, that paint chip seems to have been misplaced. I think my husband’s plan is to wait at least a year before thinking about possible part time jobs. Although he’s well past retirement age, he thinks he’d still like to do something, just not full time. So at least your husband isn’t hanging around the house?

      • My husband usually isn’t hanging around the house now but during the first time he tried retiring he was. His favorite question was where were we going for the day and where we were going to have lunch. Needless to say, I gained weight. 😀

  9. oooooh, rosemary ribs! This recipe will be on the menu once we cycle through the list already made. Have you tried rosemary ranch chicken yet? Its currently our favorite recipe and comes up at least once every couple of weeks.

    Hope you’ll join us for NaNoWoofMo. I saw you read Bongo’s contribution. It was a real cliff hanger!

    • I haven’t tried rosemary ranch chicken yet but it sure sounds good. Just tonight I roasted a whole chicken & make little pockets under the skin with a mixture of softened butter, rosemary, thyme, & parsley…it seemed to be a winner. I never did much with rosemary before but now that I’ve tried some recipes with it, I really do like it.
      I did enjoy Bongo’s contribution…but then again, Bongo is a pretty creative dude.

  10. I love my Mac. I’ve had for about 6 months and its much easier to use than a PC laptop. Although Safari browser is a bit weird. As for those ribs i never thought to shred them – very innovative! It occured to me today I might have another 20 years of work ahead which I dont think I can deal with.

    • I have my Mac class tomorrow – unfortunately it’s at 8:00 am & I’m not a morning person so I’m not sure how much will stick. I’m having a hard time with that Safari browser too – I keep losing things & finding it hard to get back to where I started out. I’ll say one thing about the Mac vs. Microsoft – it’s a lot faster & doesn’t have quite so many – shall we call them quirks or shall we call them bugs?
      I shredded my ribs because I was trying to copy this great meal I had in New York City. They shredded theirs so I figured why should I argue with a winner?

  11. You’re braised short ribs look absolutely spectacular. I love the rosemary within the seasoning. Definitely gives it a wonderful flavor. And I enjoyed reading about your retired husband, my step-dad is doing the same thing right now and my mother loves it lol.

    • Thank you & I did like the rosemary in there which is not something I’d cooked with very much for some reason. Now that I’ve bought my Mac, my husband is ogling it talking about how he might like to try it! Really? I got myself a Mac to be able to get on when I want and I don’t mean to sound greedy or protected but I’m not willing to share just yet. I’m getting around it so far by promising to show him the Mac vs. PC … when I’ve got a few minutes. At least we’ve resolved the issue with rearranging the kitchen!

    • Thank you so much and I love the way the house smells when something’s croaking in the pot :). My husband and I both want to get some traveling in and I’m thinking that with the way this winter is shaping up for us already, that a warm place is already sounding good. It is a lot of fun to do day trips though and we’ve had some awesome meals in Boston lately. So many places to try in the city.
